A nivel mundial, alrededor de un tercio de las pérdidas y desperdicios de materias primas se generan en diferentes etapas de la cadena de transformación de los alimentos. Esto genera impactos económicos, sociales y ambientales como incrementos en la huella hídrica, emisión de gases de efecto invernadero, presión sobre el uso de la tierra cultivable, costos de producción, y disminución de la disponibilidad de alimentos para la población.
Sin embargo, son muchas las empresas y emprendedores que están implementando estrategias para minimizar la generación de estas pérdidas. Y Chile no se queda atrás.
El 4 de marzo, en el Día de la Ingeniería para el Desarrollo Sostenible, el Centro Tecnológico para la Innovación Alimentaria (CeTA) destaca algunos ejemplos de alimentos impulsados por emprendedores chilenos, que demuestran cómo es posible avanzar en una dieta sostenible, que resguarde el medioambiente y la seguridad alimentaria.
“En los centros de innovación de CeTA ubicados en Santiago, Coquimbo y Temuco hemos trabajado con emprendedores en el desarrollo de diversos alimentos que evitan el desperdicio de materias primas o que permiten recuperar descartes de frutas o verduras. De esta forma, estamos creando alimentos saludables, que aportan vitaminas, minerales, fibra y antioxidantes a quien los consume y, a la vez, generan beneficios para el medioambiente“, dice Juan Pablo Vivanco, coordinador del Centro de Innovación Carén de CeTA Alimentos.
Algunos de estos alimentos sostenibles son:
Snack saludable con orujo de uva
Empresa: B-Japi
Junto con el emprendimiento de alimentación saludable B-Japi, se desarrollaron snacks para el mercado nacional que reutilizan el orujo de uva, residuo que queda del proceso de prensado de esta fruta para hacer vino.
Con formato tipo sticks, para poder untarlos en salsas, este snack permite reutilizar y dar valor a este subproducto de la industria del vino como nuevo ingrediente, mediante su estabilización con tecnología de deshidratación y posterior extrusión.
El producto final es un alimento rico en fibra dietética y en antioxidantes, lo que permite entregar a los consumidores un producto que además de sabroso, tiene propiedades beneficiosas para la salud.
Cereales para el desayuno con residuos de cebada
Empresa: Cerveza Triunfo
El bagazo de la cebada, un residuo de la industria cervecera que suele descartarse, se utilizó como base de un innovador cereal para el desayuno con propiedades saludables, sin sellos de advertencia y con un componente de economía circular.
El cereal se encuentra actualmente a nivel de prototipo, validado en términos de escalamiento productivo, de composición nutricional, de inocuidad y sensorial.
Sopas y compotas con descartes de hortalizas y frutas

Fundación Banco de Alimentos Lo Valledor
Hojas y tallos de betarragas, apio, brócoli y tomate en buen estado descartados en el mercado Lo Valledor son la base de dos sopas preparadas para alimentar a personas en situación de vulnerabilidad. Lo mismo se hace con ciruelas, peras y plátanos para crear una sabrosa compota de frutas. Además, las sopas y compotas se pueden utilizar para preparar distintas recetas culinarias saladas y dulces, respectivamente.
Estos alimentos, ricos en fibra dietética, vitaminas, minerales y antioxidantes han permitido que cerca de 800 toneladas anuales de frutas y verduras que antes se iban a la basura hoy se transformen en alimentos con propiedades saludables.
