Con el fin de congregar a emprendedores y profesionales de la industria de la alimentación de Coquimbo, el Centro Tecnológico para la Innovación Alimentaria (CeTA), apoyado por Corfo, junto a la Corporación Regional de Desarrollo Productivo (CRDP) organizaron el seminario “Desarrollo de Productos e Innovación: un desafío constante”, actividad que contó con la participación de destacados expositores del ámbito. El doctor Franco Pedreschi, profesor titular del Departamento de Ingeniería Química y Bioprocesos de la Pontifica Universidad Católica de Chile, abordó el “Rol de la química y microestructura en el diseño de alimentos y nutrición”. En su exposición destacó cómo los alimentos del futuro serán diseñados no solo a partir de sus propiedades sensoriales y nutricionales, sino también con el objetivo de proporcionar funcionalidades específicas dentro del cuerpo, más allá de la mera nutrición.
Lorena Pacheco, jefa del Centro de Innovación Zona Norte CeTA, detalló las principales dudas que surgen entre emprendedores y empresarios a la hora desarrollar alimentos, y todo lo que implica la innovación en esta área, haciendo hincapié en el potencial que tiene la entrada en operaciones del centro inaugurado en enero en la Región de Coquimbo.
Finalmente, Rubén Godoy, director y gestor de Desarrollo de Empresas Asociativas Campesinas, se refirió a la experiencia de la Cooperativa Agrofrutícola Chillepín y Cooperativa Campesina Apícola Choapa y de la importancia de la innovación en los modelos de negocios, en los productos y en los procesos productivos.
Por su parte, Jean Paul Veas, Director Ejecutivo del CeTA, indicó que el Centro de Innovación Zona Norte permite que “hoy Coquimbo cuente con un recinto de un valor estratégico importante, porque se está aterrizando todo el potencial I+D+i a las necesidades concretas de los emprendedores del rubro alimentario, que pueden elevar al máximo las posibilidades de sus productos y contribuir a la reactivación de la zona”.
En tanto, el director regional de Corfo, Gregorio Rodríguez, destacó la agregación de valor como motor de diversificación de la economía regional: “a través de CeTA se entregará a las pequeñas y medianas empresas la oportunidad de prototipar, investigar, avanzar y desarrollar nuevos productos alimentarios de la mano de la innovación”. Además, enfatizó en la importancia de la transferencia de conocimientos y experiencias exitosas, apuntando a la amplia gama de sectores productivos existentes en la región, dentro de ellos todos los productos del mar relacionados a la pesca, acuicultura, el mundo caprino, la agricultura y la agroindustria.
Finalmente, Manuel Schneider, gerente de la CRDP, indicó que “como Corporación una de nuestras líneas de trabajo es la difusión, para lo cual constantemente realizamos actividades de capacitación para distintos actores públicos, privados y del sector científico-académico. Queremos que se den a conocer propuestas y soluciones necesarias para el desarrollo y posicionamiento de la industria alimentaria regional y creemos que con este tipo de acciones aumentamos las habilidades técnicas de las empresas de nuestras tres provincias”.
La actividad, llevada a cabo de forma online, contó también con la presencia de Jean Paul Veas, Director Ejecutivo del CeTA; Claudio Daud, jefe de la División de Fomento e Industrias del Gobierno Regional de Coquimbo, y Gregorio Rodríguez, Director Regional de Corfo. Por su parte, Viviana Arias, ejecutiva del Eje Alimentario de la CRDP, fue la encargada de moderar el seminario.
