Desafíos y oportunidades para la población mundial: CeTA identifica tres tendencias de la alimentación del futuro

El Centro de Innovación Norte de CeTa Alimentos, apoyado por Corfo, cuenta con equipamiento para ofrecer servicios de desarrollo pilotaje y escalamientos semiindustrial de alimentos de origen agrícola y del mar a empresas y emprendimientos.
A partir de este mes los procesos realizados en sus instalaciones cuentan con resolución sanitaria, lo que permitirá a los productores llegar a retail, supermercados y mercados externos que solicitan esta certificación.
Emprendedores y pymes de alimentos de sectores apartados o rurales de la región de Coquimbo y de la zona norte del país tienen a partir de este mes la posibilidad de ampliar sus mercados de distribución para llegar a las góndolas de supermercados, grandes tiendas e, incluso, a mercados internacionales que exigen productos con resolución sanitaria.
Lo anterior, gracias a que la Seremi de Salud de Coquimbo otorgó la resolución sanitaria al Centro de Innovación Norte de CeTA Alimentos. De esta manera, todos los alimentos que pymes y emprendedores desarrollen, piloteen y escalen a nivel semiindustrial en su planta ubicada en la ciudad de Coquimbo, saldrán de ella con resolución sanitaria.
“Esto es un gran avance para apoyar a pequeños productores de zonas rurales o apartadas de la región que producen artesanalmente y no cuentan con las condiciones para obtener su propia resolución sanitaria”, destaca Lorena Pacheco, jefa del Centro de Innovación Norte de CeTA.
Agrega que “estamos felices, porque esta certificación se otorgará a los alimentos que se produzcan en todas nuestras líneas de procesos, que incluyen concentrados hortofrutícolas, conservas marinas, pastas untables y deshidratación de frutas y verduras. Esto permitirá a los emprendedores comercializar los productos elaborados en nuestras instalaciones de acuerdo a la normativa e ingresar a nuevos mercados.
Precios más competitivos
Morgan Thomas es socia fundadora de Amami, un emprendimiento de alimentos artesanales de Salamanca. Su producto estrella son las mermeladas orgánicas hechas con frutas de pequeños productores locales del valle del Choapa y el resto de la región.
Para ella esta noticia se suma a otros beneficios que reporta pilotear y escalar su producción en una planta semiindustrial como la de CeTA.
“Si bien en nuestra fábrica instauramos buenas prácticas para trabajar bajo estándar de resolución sanitaria, en CeTA hemos visto la oportunidad de producir a mayor escala, con apoyo de ingenieros en alimentos y en una sala de procesos con máquinas adecuadas para producir volúmenes que nos permitan llegar al mercado con precios más competitivos”, señala.
En el caso de las mermeladas ꟷun emprendimiento muy extendido en la IV regiónꟷ Lorena Pacheco señala que “tenemos la capacidad de ofrecer a un pequeño productor que procese desde 200 kilos de fruta en un día. Para eso contamos con marmitas de acero inoxidable, dosificadores para llenar frascos, cerradora de tapas y autoclaves para esterilizar los envases. De esta forma, es posible sacar en poco tiempo una producción a escala semiindustrial lista para comercializar”.
Desde el punto de vista del productor, esto implica un cambio en la forma en que tradicionalmente se han desarrollado estos emprendimientos.
“Sin un servicio como el que ofrece CeTA, nosotros tendríamos que encontrar el capital para armar una sala de proceso propia, comprar máquinas y contratar a una o más personas, lo que toma tiempo e implica riesgos. En cambio, al tener esta planta en nuestra misma región, me basta coordinar el día para llevar la fruta y fabricar la mermelada que voy a comercializar. De esa forma puedo empezar a generar los ingresos que me permitirán hacer la inversión más adelante”.

El Centro Tecnológico para la Innovación Alimentaria (CeTA) es parte de la hoja de ruta del Programa Estratégico Transforma Alimentos, impulsado por CORFO para contribuir a que Chile se convierta en una de las potencias mundiales en producción de alimentos innovadores y sostenibles.
Su planta de Coquimbo atiende a empresas y pymes de los sectores agrícola y acuícola de la zona norte del país. Los interesados en conocer sus instalaciones y los servicios que se ofrecen para pilotear, prototipar y escalar la producción de nuevos alimentos pueden contactar a su jefa, Lorena Pacheco (lpacheco@cetalimentos.cl), para concertar una visita.
