Usar la tinta de calamar para teñir tallarines, convertir vísceras de mariscos en un alimento para animales o transformar la cáscara de chañar en una harina para repostería, son algunos de los proyectos de 35 empresarios/as y emprendedores de las tres provincias de Coquimbo para convertir sus descartes o mermas en un nuevo producto con valor agregado.
Este es el objetivo del “Programa de Difusión Tecnológica Regional para la revalorización y circularidad en distintos eslabones de la cadena productiva de la industria alimentaria de la Región de Coquimbo”, cuyo lanzamiento se realizó el 29 de marzo.
En la ocasión, representantes de las empresas y cooperativas seleccionadas pudieron conocer lo que hacen sus pares y de qué forma el programa de 18 meses de duración les entregará las herramientas y conocimientos necesarios para convertir sus residuos en productos comercializables y hacerlos llegar al mercado.
El Programa es ejecutado por el Centro Tecnológico para la Innovación Alimentaria (CeTA) Zona Norte y financiado por el Gobierno Regional de Coquimbo a través de Corfo, entidad que dará seguimiento al programa.
Se trata de un proyecto que tiene un financiamiento de $96 millones, de los cuales $60 millones vienen desde el Fondo de Innovación para la Competitividad del Gobierno Regional de Coquimbo a través de Corfo, que dará seguimiento al programa.
Desde Corfo indican que la idea es conectar capacidades técnicas y tecnológicas con la red de empresas de la región para avanzar hacia un desarrollo basado en el triple impacto: económico, social y medioambiental, y con un foco en economía circular. De esta forma se espera avanzar hacia la valorización de residuos a los que no se está dando uso en la región.
Materias primas y descartes
Entre las empresas que participarán en el programa hay quienes cultivan o usan como materia prima lechugas hidropónicas, hortalizas, papayas, almendras, nueces, higos y chañar. En el ámbito acuícola hay mipymes que trabajan con pescado, jibia, calamar, ostiones, machas y algas, entre otras.
Un levantamiento realizado entre los beneficiarios por Jorge Cortés, coordinador de proyectos de CeTA Alimentos Zona Norte, arrojó que los principales residuos con los que quieren trabajar las empresas del agro son cáscaras, cuescos, pulpa, hojas y tallos. “En el ámbito acuícola destacan vísceras, conchas, algas y cáscaras de crustáceos, mientras que los residuos pecuarios incluyen interiores, carne, hueso y suero de leche”, detalla Cortés.
“Esto es un desafío para la región. Nos dimos cuenta de que las empresas tienen necesidad e interés en reutilizar sus residuos, pero que hay una brecha en los conocimientos básico de tecnología para desarrollar productos a partir de ellos. Es por eso que proporcionarles tecnología y conocimientos es uno de los focos principales de este programa”, destaca Lorena Pacheco, jefa de Innovación Zona Norte de CeTA Alimentos.
El programa considera talleres, charlas, actividades prácticas y asesoría especializada para las 35 empresas seleccionadas. Además, conocerán el equipamiento y profesionales de CeTA, corporación creada al alero de Corfo y especializada en desarrollo e innovación alimentaria.
En sus plantas de Coquimbo, Santiago y Temuco, CeTA Alimentos cuenta con más de 100 equipos como hornos deshidratadores, molinos, marmitas, pasteurizadores y extrusores, disponibles para que las empresas hagan desde el desarrollo y pilotaje hasta la producción semiindustrial de nuevos alimentos e ingredientes.
Tatiana Castillo, presidenta de la Comisión de Fomento Productivo, Ciencia, Tecnología e Innovación del Gobierno Regional de Coquimbo, destacó que “los pequeños emprendimientos son la base del crecimiento de la región y los que tienen que ver con salud y alimentación son los que más necesita la gente, por eso es importante que su crecimiento sea sustentable y renovable”.
