Frente al reiterativo y urgente llamado a la acción de los organismos expertos en Cambio Climático a nivel mundial, las medidas que podemos adoptar en el sector alimentario para buscar su aseguramiento en el futuro son prioritarias y posibles de desarrollar hoy.
Una de ellas es la adopción de mecanismos de Economía Circular en el sector, observándose un creciente interés de actores de la industria en crear nuevos productos en base a la reutilización de alimentos descartados o residuos derivados de la producción de éstos. Nutrisa y The Imperfect Project nos cuentan su experiencia trabajando con los equipos tecnológicos y profesionales de CeTA.
En el mundo, cerca del 14 % de los alimentos producidos se pierden entre la cosecha y la venta minorista.
En Chile, según datos del Informe SOFI de la ONU, alrededor de 700 mil personas sufren la inseguridad alimentaria severa, lo que significa que a menudo se quedan sin alimento a veces hasta por varios días.
En ese contexto, resulta trascendental todo esfuerzo que hagamos hoy en materia alimentaria, en toda la cadena de producción, para asegurar la alimentación en el futuro.
El Centro Tecnológico para la Innovación Alimentaria (CeTA) ha trabajado con diversas empresas de distintos tamaños para aplicar tecnología de punta que permita desarrollar economía circular en los procesos productivos de los alimentos. Nutrisa y The Imperfect Project, encontraron en la reutilización de alimentos descartados y de subproductos derivados de su producción una forma de aportar a reducir el desperdicio alimentario y al mismo tiempo generar valor en los productos que comercializan.
La Gerenta de Negocios del CeTA, Daniela Fuentes, nos cuenta sobre los servicios y herramientas con las que cuenta el CeTA para aportar a que la industria alimentaria funcione de manera más sostenible a través de economía circular.

Nuestras plantas piloto, ubicadas en la zona Norte, Centro y Sur del país, cuentan con equipamiento de última generación, que permite validar e iterar rápidamente los desarrollos y evaluar su factibilidad comercial. Estamos comprometidos con impulsar la innovación y la sostenibilidad en la industria alimentaria, ofreciendo soluciones eficaces y sostenibles a nuestros clientes y contribuyendo al cuidado del medio ambiente”
The Imperfect Project y su comida “saludable, sustentable y REAL”
The Imperfect Project es una empresa comprometida con crear productos “saludables, sustentables y reales”, liderada por Adriana Behm, agrónoma y CEO (Directora Ejecutiva) de la marca, su hermana Amanda Behm, COO (Directora de Operaciones) y Pedro Mena, CFO (Director Financiero). Su trabajo se desarrolla principalmente en alianza con el Mercado de Lo Valledor, donde ayudan a disminuir las casi 17 toneladas de frutas y verduras que se desperdician en ese lugar.
En el año 2021, se acercaron al CeTA con la necesidad de desarrollar el piloto de un producto extruído que incorpora en sus componentes verduras recuperadas, tales como betarraga, brócoli y repollo, producto que estarán lanzando en los próximos meses al mercado. Adriana Behm, CEO en The Imperfect Project, señala como principal fortaleza del CeTA el altísimo nivel de los profesionales, su compromiso con los proyectos, que prestan servicios a menor escala y la celeridad con que se desarrollan:
“El gran aporte del centro fue tener a tantos profesionales con conocimientos en el área de alimentos, lo que hizo poder crear un muy buen producto en poco tiempo (…) Recomendaría totalmente que otras empresas u organizaciones trabajen con el CeTA ya que aporta mucho en consolidar conocimientos y generar prototipos de baja escala a gran velocidad. También porque ofrecen servicios a pequeña escala que pueden servir para partir con algunos productos (…) las personas que trabajan son extremadamente profesionales y se toman cada proyecto como si fuera propio, lo que da una sensación de cercanía y acompañamiento constante”
La idea de NUTRISA que se hizo producto
Con casi 40 años en el mercado alimentario, desarrollando productos para dietas especiales, Nutrisa, fue una de las primeras empresas nacionales que se dedicó a la alimentación saludable.
En la actualidad se encuentran a punto de lanzar al mercado un producto en base a elementos derivados de la producción de sus otros productos, con el apoyo de CeTA
El año 2021 Nutrisa se acercó al CeTA con la inquietud de viabilizar un producto basado en reutilización, pero sin un mayor desarrollo de la idea. Los profesionales del CeTA tomaron su problemática, definieron el producto y pusieron al servicio de Nutrisa su capacidad técnica y profesional para llevar a cabo un pilotaje. Jessica Sáez, sub gerente de Desarrollo e Innovación de Nutrisa, señala que el trabajo con el Centro fue integral, profesional, grato y altamente recomendable para empresas y pymes, destacando además la capacidad profesional y el equipamiento de punta con el que cuenta su planta en Laguna Carén.
“Nos apoyó en la definición del producto a desarrollar, desde el momento que les presentamos la problemática interna asociada a la obtención de un subproducto que se da en la producción de otro producto de la compañía (…) CeTA contaba con el equipamiento necesario para realizar las pruebas a escala piloto que nos permitieron definir los parámetros para luego escalar industrialmente (…) Recomendaría 100% que otras empresas y pymes trabajen con el CeTA en sus proyectos, ya que el acompañamiento, orientación y apoyo es realmente integral: te ayudan desde los aspectos técnicos de tu proyecto con sólidos conocimientos y experiencia en la industria de alimentos que poseen los integrantes del CeTA, hasta en los aspectos administrativos y procesos financieros en el caso de tener proyectos CORFO”
Nutrisa y The Imperfect Project se han atrevido a dar un salto hacia una mayor sostenibilidad en la industria alimentaria, asumiendo la responsabilidad que tiene cada actor de ella en aportar a avanzar cada día más hacia una mayor seguridad alimentaria en Chile y en el mundo. El Director Ejecutivo del CeTA, Jean Paul Veas, enfatiza en estos desafíos y advierte que las capacidades del Centro están al servicio de la economía circular y todos los proyectos que aporten a un futuro más sostenible para todas y todos.
