Emprendedores en alimentos se reunieron en el primer Encuentro organizado por CeTA para la zona norte

- Una bebida en base a cúrcuma y con nanotecnología aplicada; un condimento a partir de los tallos de la betarraga, que reemplaza la sal, además de una hamburguesa y “carne mechada” veganas, fueron las innovaciones en alimentos saludables que se difundieron en el stand del Centro Tecnológico para la Innovación Alimentaria (CeTA) de Espacio Food & Service.
CeTA se hizo presente en la novena versión de Espacio Food & Service, la principal feria especializada de la industria de alimentos en Chile, con un stand compartido con Co-inventa, donde además de dar a conocer los servicios disponibles para la innovación en alimentos, se difundieron tres novedosos emprendimientos del sector.
El martes 10 de septiembre se presentó Nanofix, un producto funcional que es descrito por Javier Ramírez, emprendedor de la startup Matchetune, como “curcumina 99% pura, solubilizada y llevada a tamaño nano (300 nanómetros), para lograr absorción, y nanoencapsulada para protegerla de las condiciones ambientales que la degradan: luz y cambios en pH y oxígeno”. Explica que, a través de este proceso, respaldado por un equipo científico de la Universidad de Chile, “se logra un anti inflamatorio, anti cancerígeno y anti oxidante potente, pero 100% natural”, que se consume como un shot en lata.
Nanofix, producto funcional en base a cúrcuma con propiedades antiinflamatorias, anticancerígenas y antioxidantes.
Para el segundo día la innovación exhibida fue un condimento que reemplaza la sal, pero que es cien por ciento vegetal. Denominado Betasal, es el principal producto de María Francisca Silva, emprendedora de Cormo Alimentos, quien destaca su fabricación “a partir de los tallos de la betarraga, que son de sabor salado, y que por lo general constituyen un desecho doméstico”. Destaca que “a diferencia de la sal común, mientras más Betasal añadas a tus comidas, más beneficios recibes”. Cabe señalar que este producto obtuvo el primer lugar del certamen IFT Agro Emprende, que reconoce las innovaciones en el sector agrario del país.
Finalmente, el jueves 12 de septiembre se dieron a conocer innovaciones veganas de la marca Meatless, emprendimiento encabezado por Sebastián Schmitz. “Presentamos dos productos que buscan emular textura, sabor, color y nivel proteico de la carne: una hamburguesa, que cuenta con 17 gramos de proteína por porción de 100 gramos, y una carne mechada vegana, que tiene 13 gramos de proteína por porción de 100 gramos”, describe Schmitz, destacando que ambos productos “son fabricados con fibra de trigo y proteína de arveja, libres de soya”.
Respecto a la participación en Espacio Food & Service, Jean Paul Veas, director ejecutivo de CeTA, destaca que “además de dar a conocer nuestros servicios para la innovación en alimentos, que son principalmente de pilotaje y prototipaje, quisimos dar difusión a emprendedores que han logrado crear productos disruptivos en su categoría, que además tienen beneficios de salud y sustentabilidad asociados, por lo que se trata de casos notables. Ellos son un ejemplo de que se puede agregar valor y generar productos saludables, con un enfoque sustentable, y nosotros -como CeTA- existimos para facilitar ese proceso”.
